About Saffron
Planting saffron in Iran is 3000 years old.
This colorful and precious plant is perennial, without stems and has onions, and because it is made in desert soil, it is known as red gold or desert gold.
For every 150 flowers, one gram of saffron and for about 147,000 fresh flowers, one kilogram of dry saffron is obtained.
Due to its excellent taste, color and aroma, saffron has many applications in the production of food, medicine and chemical products, and due to the limitations of cultivation and production, it is one of the most expensive products.
Iran, with an average production of 100 tons per year, ranks first in saffron production. Spain is in second place with an average production of 25 tons, followed by India, Russia, Singapore, Malaysia, Japan, Taiwan, China, France, Italy, Germany, Australia and Greece with an average production of 25 tons.
The main center of cultivation of this plant is the desert and low water areas of southern Khorasan and the history of saffron cultivation in this region dates back to 700 years ago.
Saffron is one of the few plants that are grown in harsh biological conditions. Due to the historical place of saffron in Iran and its origin is also Iran, this plant is one of the special attractions of Iran.
Saffron is a medicinal and industrial plant. The saffron flower, which is called the stigma or red part of the root, is light red at the beginning of harvest, but gradually turns dark red. Its freshness has a pleasant aroma and gives the food its taste and pleasure
